Let's Have Ham Today!

Once in a while you can find a recipe that you simply have to share. My turn to do just that. This is a great casserole that you can use for whatever time of day you please. It is great for supper or for breakfast. Doesn't this sound great to wake up to or come home to after a busy day? The kids will love it. Serve with a side dish of broccoli or green beans.

Ham Casserole

2 cups cooked ham, cubed

3 eggs, beaten

black pepper to taste

1 can condensed cream of chicken soup

16 oz. sour cream

2 lb.frozen hash brown potatoes, thawed

1 onion, chopped

3/4 cup shredded Cheddar cheese

1/4 cup butter, melted

1. Preheat oven to 350 degrees. Lightly grease a 9x13 inch baking dish.

2. Season beaten eggs with pepper; pour into baking dish. In a large bowl, combine ham, soup, sour cream, hash browns, onion and cheese. Mix thoroughly and pour over eggs.

3. Bake uncovered for 30 minutes. Remove and pour butter over top of mixture. Return to the oven and bake for an additional 15 minutes, until golden.
